Carrot and walnut loaf

This nutty loaf not only tastes good but when made with FLORA PRO-ACTIV spread can help reduce your cholesterol absorption.

Serves: 12

Carrot and walnut loafIngredients:
1 3/4 cups self-raising flour 
1 teaspoon baking powder 
1 teaspoon ground cinnamon 
1/2 cup brown sugar, firmly packed 
1 cup grated carrots 
1/2 cup walnuts, finely chopped 
1/2 cup FLORA PRO-ACTIV spread 
2 eggs, lightly beaten 
1/2 cup reduced fat milk 
1/2 teaspoon vanilla essence 

Preparation

Step 1:  Pre-heat oven to 180°C and line a 23x13 cm loaf tin with baking paper.

Step 2:  Sift flour, baking powder and cinnamon into a mixing bowl. Add brown sugar, carrot, walnuts, melted FLORA PRO-ACTIV spread, eggs, milk and vanilla. Mix, with a wooden spoon, until well combined. Place mixture into prepared tin.

Step 3:  Bake for 45 minutes or until a skewer inserted in the centre comes out clean. Allow to cool in tin for 5 minutes before transferring to a wire cooling tray. Cool. Serve cut into slices, plain or spread with FLORA-ACTIV spread.

Hint:  One slice will give you about half of what you need each day to lower your cholesterol absorption. Notes:  FLORA PRO-ACTIV spread 125g=0.5 cup; milk 125mL=0.5 cup. Makes 1 loaf.
