Chicken Patties
These tasty patties are an appertising alternative to beef patties.
Serves: 4

Ingredients:
Chicken patties:
1 packet CONTINENTAL Cream of Chicken Soup Mix
2 cups mashed potatoes
2 cups chopped cooked chicken
1/2 cup sliced shallots
oil for frying, about 1/4 cup
Tossed Salad:
6 cups mixed lettuce leaves
1 Lebanese cucumber, sliced
1/2 green capsicum, sliced
1 punnet cherry tomatoes, halved
2 tablespoons salad dressing
Preparation
Chicken patties:
step 1: Place Cream of Chicken Soup Mix, mashed potatoes, chicken and shallots into a bowl and mix well.
step 2: Divide mixture into eight equal portions. Roll each into a ball, then flatten lightly to form a patty shape.
step 3: Fry patties gently in hot oil until golden brown on each side. Drain and serve with tossed salad.
Tossed Salad: Place lettuce, cucumber, capsicum and cherry tomatoes into a bowl. Just before serving add dressing and toss to combine.
Hint: When preparing mashed potatoes, drain potatoes well and do not add any extra ingredients, so that the mash remains fairly dry. This will make the patties firmer and easier to shape.
